Pumpkin spice season is fading fast! With Christmas just around the corner, my husband and I are working through the cans of pumpkin that we bought in the early days of fall. While muffins, scones and bread are always delicious, sometimes it’s nice to give something different a pumpkin twist.
Baked oatmeal is one of my favourite ways to eat oatmeal. The eggs and milk give it a slightly custardy texture that make it a more interesting alternative to plain porridge. It’s hearty and filling, good hot or cold and there are tons of ways to mix it up and add a little spice to your morning.
The pumpkin, molasses and classic pumpkin spice combination make this pumpkin spice baked oatmeal perfect for chilly fall mornings or special occasions. You can whip it up and bake it right away, or mix it the night before so it’s ready to pop in the oven when you wake up.
Ingredients
Baked oatmeal
2/3 cup pumpkin puree
2 eggs
1/3 cup brown sugar
2 tbsp molasses
2 tbsp butter, melted
2 tsp cinnamon
1 tsp ginger
1/2 tsp nutmeg
1/8 tsp cloves
2 cups milk
2 1/2 cups rolled oats
Streusel topping (optional)
1/2 cup rolled oats
2 tbsp all-purpose flour
2 tbsp brown sugar
1 tsp cinnamon
3/4 cup pecan halves
1/4 cup butter, softened
Instructions

1. In a large mixing bowl, add the pumpkin puree, eggs, sugar, molasses, melted butter, cinnamon, ginger, nutmeg and cloves. Whisk to combine.
2. Slowly add in the milk and continue whisking until the mixture comes together.
3. Add rolled oats and stir to combine. The mixture will be very wet – this is normal. Some baked oatmeal has a higher liquid-to-oat ratio, which results in a more textured oatmeal. This oatmeal is meant to bake quite soft.
4. Pour the mixture into an 8×8 square pan. Cover the pan and store in the fridge overnight*

5. (Optional) In a small mixing bowl, add the oats, flour, brown sugar, cinnamon and butter for the streusel topping. Use a fork or pastry cutter to mix until the mixture is sandy. Stir in the pecans. Cover and store in the fridge overnight.
6. Preheat the oven to 350 degrees. Pour the streusel topping over the baked oatmeal and spread evenly. Bake for 50-60 minutes, or until the top is golden brown and the oatmeal is set in the center.
7. Serve warm. Try it plain, with milk, or with a scoop of plain greek yogurt and a drizzle of maple

*If you are baking the oatmeal right away rather than making it ahead, we recommend letting it bake about 20-25 minutes before adding the streusel topping. This will allow it to set enough to hold the topping.
